Spiralizer basics for perfect courgetti spaghetti and zucchini noodles
Learn how to make perfect courgetti in minutes. Everything you ever wanted to know about making zucchini noodles or courgette spaghetti with your spiralizer.
If you’ve got a new spiralizer and are wondering how to make the new healthy pasta then I can show you how in 3 (very) easy steps.
Step 1: Spiralize
Wash and dry one medium courgette. A really fat one like a marrow won’t fit easily into your spiralizer and a skinny one won’t make a nice big bowl of spaghetti. Trim the rounded end off the courgette and you are ready to go.
Press the courgette firmly into your spiralizer turning smoothly. The quickest and simplest way to do this is to just keep going with one long twist. Don’t stop until you’re in danger of spiralizing your fingers! You should be left with the stubby end and a small cone of courgette to discard.

Keep an even firm pressure on the courgette as you spiralize and don’t stop.
Step 2: Blot
Place 2 pieces of kitchen paper out on your work surface. Spread your courgette spaghetti evenly over the paper. Place 2 more pieces of kitchen paper over the top of the courgette. Press down firmly with your hands. Leave for 2 minutes. Watch in amazement when you see how much water comes out of the courgette in that time.
If you don’t blot then sadly your courgetti *will* be mushy. It’s important folks and only takes 2 minutes.
Step 3: Cook
Take a wide frying pan and place on the highest heat. Add one teaspoon of oil. I use olive oil as one of the most natural oils available. Heat the pan until it is sizzling hot. Test by dropping one small piece of courgetti into the pan. If it sizzles then add the rest of the courgette. Push it round the pan so it spreads out evenly. Leave to cook undisturbed for one minute. Then stir. Leave for another minute. Stir again. If you wish, add salt and pepper at this stage. Cook for another minute. The courgetti is perfectly cooked in 3-4 minutes. Serve immediately.
Make sure the oil is sizzlingly hot before adding the courgetti.
